LLCC Culinary Arts Program partners with Springfield’s historic Pasfield House to offer two cooking series

SPRINGFIELD – Individuals and couples are invited to improve their cooking skills in the historic surroundings of a superbly renovated and architecturally significant Springfield home. Lincoln Land Community College has partnered with the proprietor of the Pasfield House to offer two series of cooking classes that begin in January.

“We are thrilled to welcome outstanding local chefs and interested students to the Pasfield House’s newly renovated chefs’ kitchen for these classes,” said Tony Leone, proprietor of the Pasfield House, located just west of the Illinois State Capitol Complex. The Pasfield House, former home of the historically prominent Pasfield family, has won several awards for its renovations and is used for receptions, dinners, executive business meetings, parties and galas.

The first series is a “cooking ‘boot camp,’ and will be offered on Thursday evenings,” according to Jay Kitterman, LLCC hospitality programs coordinator. “These classes will cover the basics in a particular skill or cuisine. A light meal will be shared at the end of each class.”

A second series of Friday night classes is designed for couples. “A compete dinner will be prepared by the chef/instructor with some assistance from the class, and participants will also enjoy appropriate wines with each meal,” said Mr. Kitterman.

These classes will differ from those traditionally offered at the college in that they will focus on demonstrations. “The experience will be similar to a front row seat at one of the best cooking shows featured on the Food Network,” said Mr. Kitterman. “A bonus will be the experience of learning these skills in the rich décor and historic elegance of the Pasfield House.”

Feb. 1: Cooking with Vegetables with Charlyn Fargo, registered dietitian, nutrition columnist for the State Journal Register and culinary instructor at LLCC

Feb. 8: Basic Pastry with Michael Camerano, graduate of the Culinary School in Chicago, former chef in Chicago area restaurants, current chef at Springfield’s Pao restaurant and instructor at LLCC

Feb. 15: Pasta with Denise Hansen

Feb. 22: Braising with Denise Hansen
